The estate sits in the hills above Brignoles, in the part of Provence that doesn't get as much attention as the Côte d'Azur but produces some of the appellation's most precise rosés. The Côteaux Varois-en-Provence plateau is cooler than the coast — elevations around 250 meters, clay-limestone soils; at night temperatures drop just enough to produce real freshness in the wines despite hot summers.
The property boasts a 12th-century vaulted cellar, vineyards that border the ancient Via Aurelia, and traces of Roman settlement throughout the surrounding land. All of which are part of this winery’s history. Today the property spans 40 hectares, spread across a mosaic of small plots, as in traditional Provençal agriculture — each parcel bordered by woods, garrigue, and streams.

Farming and Winemaking
Nathalie De Wulf Coquelle has farmed the estate organically since 2001. But more than that, the Annibals farming philosophy is about balance — maintaining biodiversity in and around the vineyard rather than pushing yields or manipulating the vines. On the clay-limestone parcels at elevation, that approach translates directly into aromatic, fresh wines.
In the cellar, Nathalie works gently. Cold-soak maceration keeps extraction short and controlled. Fermentations run cool — between 62 and 65°F — in stainless steel and concrete. The wines age in tank for several months before bottling.

Coteaux Varois en Provence — Estate Parcels The vineyards are small, fully south-facing parcels at roughly 250 meters elevation. Clay-limestone soils. The natural surroundings — woods, garrigue, small streams — create a cooler, more diverse microenvironment than the coastal Provence appellations. Warm days drive ripeness; cool nights preserve tension and acidity. That balance is what distinguishes Coteaux Varois wines from their lower-elevation neighbors, and it's visible in the structure of the Annibals rosé.
