Alexis Pollier was born in Fuissé in 1995, the fifth generation in a family that has farmed the Mâconnais for decades. He started working his own vineyards at twenty, young by any measure, but he came to it with a long apprenticeship behind him. In 2019, Pollier built a new cellar in Fuissé: temperature-controlled stainless vats, French oak barrels, and a setup that allows him to highlight the qualities of every parcel he farms. His parcels run across several appellations — Pouilly-Fuissé, Saint-Véran, Mâcon-Villages, among them — and each one asks something different of the winemaker. This is a one-person domaine, and Alexis is in the vines every day with his faithful canine companion, Junior.
FARMING AND WINEMAKING
Alexis farms under HVE 3 certification — Haute Valeur Environnementale, the highest tier of France's national environmental certification for agriculture. The designation covers biodiversity, phytosanitary practices, fertilizer management, and water use.
Fermentation is primarily in stainless steel, preserving varietal clarity and freshness. A portion of each wine goes through wood élevage — French oak used for texture and structural support, not to push flavor. Malolactic fermentation is completed across the range. Wines rest in a minimum of two months in bottle before release.
VINEYARD
Mâcon-Villages — Igé Parcel
The grapes for the Mâcon-Villages come from a single parcel in Igé, in the northern Mâconnais. The site sits on a 30% slope with full eastern exposure — steep enough for natural drainage and airflow, oriented to catch morning sun without the heat accumulation that afternoon exposure brings. Soils are clay and stone over limestone bedrock, a classic argilo-calcaire profile. The vines on this parcel average 50 years old.
